Book Now: Mume x Pollen Eight Hands Dinner, Singapore

This August, diners in Singapore will be treated to a taste of Taiwan via Scandinavia, when the team behind Mume, currently number 43 on theAsia’s 50 Best Restaurants list, heads to the city’s Pollen restaurant for a special eight hands dinner sponsored by S.Pellegrino and Acqua Panna.

Pollen executive chef Steve Allen will welcome Mume chefs Richie Lin, Long Xiong and Kai Ward on 30 and 31 August, where an eight course tasting menu showing off the trio’s much lauded application of New Nordic techniques to Taiwanese ingredients, inspired by spells at Noma, as well as Allen's sophisticated take on French Mediterranean cuisine will be prepared.

Dishes will include Mume’s famed Wagyu Beef Tartare with clam mayo, confit egg yolk and preserved daikon, a dish of seaweed-poached Akoara King salmon with cured scallops and Scottish brown crab from Englishman Allen, designed to invoke the UK seaside, and a collaborative dish called Steamed Turbot & Herbs, served in a young ginger, Taiwanese pepper, sake, kombu and lemon thyme-infused broth. The Mume team will also be holding back a surprise for their last dish, which will epitomise the restaurant’s unwavering focus on seasonality and make use of locally sourced ingredients.

Tickets are priced at $188, plus $48 for wine pairing.

S.Pellegrino Four Hands Dinner at Odette, Singapore

Sanpellegrino is organizing a one off 4 hands dinner with visiting Chef Andreas Caminada of Schauenstein Schloss in Switzerland and Singapore-based Chef Julien Royer at Odette for an exclusive two-night only collaborative dinner on 11th and 12th November in Singapore. Tables now available for reservation.

In a culinary first, chef Julien Royer of Odette and jury member for north east Asia in S.Pellegrino Young Chef Competition 2016and Chef Andreas Caminada of Schauenstein Schloss, #47 in The World’s 50 Best Restaurants list, will join forces to create an unforgettable culinary experience for each of the special evenings.

Held in the two Michelin-starred modern French restaurant at the National Gallery in Singapore the location will make for a fitting backdrop to the signature dishes from Chef Royer, renowned for blending refined simplicity with the artful eye of Chef Caminada, whose cuisine is known to take inspiration from art. Each acclaimed Chefs will bring their own personal unparalleled culinary flair to the table in tantalising line-up of dishes.

Reservations

The Sanpellegrino Fine Dining Lovers Series at Odette will be available on Friday, 11th November and Saturday, 12th November from 7pm by reservation only.
