Dan Barber, the chef and co-owner of the acclaimed Blue Hill at Stone Farm restaurant in up-state New York, 48 on The World’s 50 Best Restaurants list, is bringing his food waste-focused restaurant pop-up to London.
WastED, which debuted at Barber’s New York City restaurant in 2015, will take over the rooftop of the Selfridges department store in Central London from 28 February to 2 April. Barber, along with an as yet unnamed series of guest chefs from across the UK and Europe, will be preparing delicious dishes comprised entirely of the kind of off-cuts and trimmings that usually end up in the trash.
“Drawing inspiration from the UK’s already-vibrant food waste movement, the pop-up will showcase ingredients-in-the-rough from local producers and purveyors across the food industry, and even riff on a few British classics,” they say.
