Dishes from Iceland and the Faroe Islands' First Michelin-Starred Restaurants

The big news from the recently released Michelin Guide to the Nordic Counties 2017 is that both Iceland and the Faroe Islands have their first Michelin-starred restauarants. Dillin Reykjavík and Koks in Kirkjubøur on Streymoy in the Faroe Islands both gained a one star rating.

We previously introduced you to Koks and 26-year-old chef Poul Andrias Ziska, you may remember, when we explored the culinary offerings of the Faroe Islands. Chef Gunnar Gíslason's Dill was also included in our city tasting guide to to Reykjavík – we're always ahead of the curve, you see. 

Here then are dishes from both restaurants, dishes that speak of a true Nordic aesthetic, with all of its wild, fresh and tasty connotations.
