Is America's Best Sushi Chef Working in Harlem?

Working as a sushi chef has this mystical view from the outside, perhaps it’s the rhythmic way they move, the way sushi has been elevated as a high art thanks to movies like Jiro Dream of Sushi, or the fact that Japanese food is steeped in tradition - sushi chefs are fascinating.

In the video below, produced by Munchies, we get to see inside the life of Shinichi Inoue - a sushi chef who trained in Japan before deciding to open his Sushi Inoue restaurant in Harlem - something that apparently would have been unheard of 20 years ago.

Inoue speaks about his passion for being a sushi chef and what it’s like to stand behind the counter serving people day after day.

It’s an interesting look into what motivates a chef, Inoue also claims that of the sushi chefs working in the United States right now he’s probably the only one to have trained in Japan for 20 years.
