10 Dishes from Lasarte – Spain's Newest 3* Star Restaurant

While the Michelin Guide to Spain and Portugal 2017 didn't present any major surprises, it was notable for the first new three star restaurant across the two countries since 2014, when Madrid's Diver XO claimed its third star.

Lasarte in Barcelona opened in 2006 and has held two Michelin stars since 2010, but this year it has joined eight other restaurants round Spain's illustrious three Michelin star table. The award is also significant in that chef-owner Martín Berasategui now has two, three Michelin star restaurants (the other is his eponymous eatery, also in Barcelona) along with the two star M.B. in Tenerife. That's eight stars in total, more than any other Spanish chef.

Chef de cuisine at Lasarte is Paolo Casagrande and below we present a selection of dishes from the restaurant that amply demonstrate just what all the fuss is all about. Get ready for some serious food porn.

Red sea prawn on a seabed, fennel and coral emulsion

Snacks

Wagyu carpaccio with extract of tarragon and iodised salad

Crayfish a la vanilla on a rice cream, black cherry, lime and bottarga


Charcoal grilled pigeon with citrus, capers, black olive and smoked sauce with galangal

          

Wild sea bass, mantis shrimp broth on a vegetable chlorophyll and truffle mayonnaise

Scarlet shrimp Royal with red curry, raw artichokes, celery and apple

Gin-tonic rested on mint, cucumber, lemon and crunchy apple

Cocoa, fermented black garlic, raspberry and muscovado sugar
