Massimo Bottura: "No More Excuses"

Massimo Bottura is flying high at the moment, very high. His Osteria Francescana restaurant in Modena, Italy, sits at the top of The World’s 50 Best Restaurants list and his new Food for Soul initiative is opening soup kitchens all around the world.

His latest kitchen was opened in Rio De Janiero during the Olympics and in a recent presentation at the Food on The Edge conference in Ireland, Bottura used the stage to discuss the project, how it was started and just how difficult it was to achieve.

The charismatic tells the audience that cooking is a call to act, and listening to his words, it’s hard to disagree with him.

It’s great to go behind the scenes of the project with Bottura as narrator, it helps to understand how much work goes into opening the soup kitchens but also shows exactly why and how chefs can make an impact thousands of miles away from their restaurants.
