10 Dishes from France's Newest Three Michelin Star Restaurant

The big news to emerge from the Michelin Guide to France 2017 was a third star for chef Yannick Alléno’s Le 1947 at the Cheval Blanc hotel in Courchevel in the French Alps. It was the only new three star restaurant in the 2017 Guide, one of 27 in total in France now, including Alléno's other restaurant, Pavillon Ledoyen in Paris.

Alléno has drawn acclaim for his modern approach to French cuisine, with particlular focus on the development of sauces, the pillars of France's gastronomical strength and what Alléno describes sauce as "the verb of French cuisine". He has in more recent years focused his work towards fermentation.

At Le 1947, named after a particulary fine Château Cheval Blanc vintage, Alléno's full repertoire of skills and knowledge are on show, a place where seasonal produce is transformed into true art on the plate.

This is a French chef at the top of the game, achieving two restaurants with three Michelin stars is a testament to a unfaltering dedication to producing some of the best cuisine the country has to offer.
