2 Vintage Recipes from Marco Pierre White

Whatever you think of Marco Pierre White now, there's no doubt that back in the late 1980s and early '90s he was the toast of London, first at Harveys and then at the Hyde Park Hotel, where he would go on to become the youngest ever chef to gain three Michelin stars, aged just 33.

The videos below were shot at Harveys, as part of a TV series focusing on the chef, when he was hot property. Okay, so the plating and some of the techniques are very much of the time, but you can bet they tasted delicious.

Look out for a cameo in the first video from Phil Howard, who would go on to win two Michelin stars at The Square in London, and in the second video, Keith Floyd, the late, larger than life restaurateur and broadcaster (seriously, if you haven't heard of him, look him up).

Howard wasn't the only famous chef to pass through the kitchen at Harveys – take a look at this clip, from the same show, of Pierre White training a young Gordon Ramsay

Also, here's a more recent recipe from Pierre White for perfect pork crackling
