Frantzén, the two Michelin star restaurant in Stockholm helmed by chef Björn Frantzén will reopen on 30 August 2017 after a year-long hiatus, it's been announced.
The new restaurant in downtown Stockholm will be five times the size of the old premises in Gamla Stan (the old town), but the number of covers wll be the same: 23.
Frantzén fuses Nordic and Japanese influences and has been closed since summer 2016, as the team completed the move to new premises. Said site, a completely renovated 19th century building, is spread over three floors, with a lounge area up top and a lift.
“The new Frantzén has the same gastronomic approach and philosophy as the previous restaurant”, says Frantzén. “The major difference is having access to a range of techniques we couldn’t previously use due to a lack of space in the kitchen, such as cooking over an open fire. But our primary goal with the new Frantzén is to create an overall experience that simply wasn’t possible in the old premises.”
Frantzén was not included in the Michelin Guide to the Nordic Countries 2017, due to its closure. Sweden currently has three, two Michelin star restaurants: Oaxen Krog in Stockholm, Vollmers in Malmo, and Magnus Nilsson's Fäviken, up in Järpen.
