Watch the Legendary Roger Vergé Prepare a Provençal Feast

Here’s some great footage of the legendary Roger Vergé, who, with the likes of the Troisgros brothers, Paul Bocuse and Michel Guérard helped define French nouvelle cuisine back in the mid-20th century.

Vergé’s restaurant Moulin de Mougins, close to Cannes, opened in 1969, and by 1974, had three Michelin stars, and was also where Alain Ducasse completed part of his culinary training. His 'Cuisine of the Sun' was influenced, to a degree, by his time spent cooking in Morocco, Algeria and Kenya.

The videos below are taken from the Great Chefs archive, a cooking show that aired in the US in the 1980s and 90s, and in to the noughties. We’ve previously featured their footage of Albert Roux at the stove at Le Gavroche, in London.

The Great Chefs team visited Mougins in 1993, and the late Vergé – sadly he passed away in 2015, aged 85 – cooked up a Provençal feast for them.
