Madhur Jaffrey and April Bloomfield Make Chicken Tikka Masala

Chicken tikka masala, the mild Anglo-Indian dish of tikka chicken with spices, tomatoes and yogurt, is much maligned by serious curry fans who bemoan its lack of authenticity, not to mention chilli heat, but it's still incredibly popular up and down the UK.

The problem is, it’s one of those dishes that can be excruciatingly bad if prepared without love, and there aren’t many more disappointing dining experiences than a bad curry.

Luckily Indian cooking legend Madhur Jaffrey and Michelin-starred chef April Bloomfield are on hand to ensure you never have a bad chicken tikka masala again, at least when preparing an Indian meal at home.

In the video below from The Mind of a Chef, Madhur is showing Bloomfield how to make chicken tikka masala from one of her own recipes: it’s all about grilling the marinated chicken first (restaurants will cook the chicken in a tandoor).

The result might change how you think about chicken tikka masala forever and it’s certainly a more appetising colour than some of the ones you find in UK restaurants.
