Relocating the World's Best Restaurant

The team behind Eleven Madison Park, the World’s Best Restaurant, recently let GQ film behind the scenes as they attempted their most ambitious project yet: relocating their entire operation down to the Hamptons for the EMP Summer House pop-up.

The mini documentary, called Pushing Perfect: Eleven Madison Park follows Daniel Humm, Will Guidara and their crew, from the emotional final service at the Manhattan restaurant before it closes for major renovation work, through to their first service at the pop-up in East Hampton, where 125 staff will be living side by side for 10 weeks, serving luxury causal fare like lobster rolls, cheeseburgers and fried chicken, and of course, plenty of rosé, to New York City summer-escapees.

The film offers an insight into the logistics of a project like this, something chefs like Grant Achatz and Heston Blumenthal have also attempted as a way of keeping their restaurant teams ticking over during a period of refurbishment. You also get to see the EMP team trashing one of the most elegant dining rooms in New York.
